Hello world, and welcome to blogmas day two!

This feels so weird! I’ve already written to you yesterday 🙂 So, what’s new with you? Since yesterday I had a little more time for reading, so I read “Harry Potter and the Chamber of Secrets” again. I’m currently re-reading the whole HP series, but as soon as I’m done I’ll be back with some more books recommendations and reviews. Also we learned something really nice about “living our truth” in gender class, so maybe I’ll share it with you someday. Oh, and also my friend got married! That led me to think that maybe I am the problem (jk though I’m literally only seventeen I don’t need no man). So, now that we’re all caught up, shall we?

Today I wanted to share with you some really simple, easy to do meals. Since we all are stuck at home, we eat, do and live the same life every day. I know that most people get tired of eating the same thing in the same way, so I thought I’d share some new ideas! Most of you probably have the ingredients at home, as these really are super easy and casual. I hope that you can use this as inspiration! 🙂

🥑 Avocado, egg and puffed rice cakes

Okay, so this first one is actually quite easy, and most of you probably have everything at home already. What you’ll need is-

  • Avocado
  • Lemon (juice)
  • Salt
  • Egg (s)
  • Puffed rice cakes
  • Whatever else you’d like to add!

First, cut the avocado in half, peel off the skin and place it on a plate. Take a fork, press and mix the avocado until you’re satisfied. Add some lemon juice and salt, and mix it all together. Try to taste the avocado while you mix, add more salt or lemon juice as you’d like.

Next, fry the the egg however you like it best. Once the egg is ready, place it on a plate along with the avocado. Add the puffed rice cakes (you can also switch these for bread!) and add anything else as you’d like. I’ve added some cream cheese and anchovy.

And that’s pretty much it for the first meal! You can switch any ingredient to a different one if you’d like. It’s healthy, easy and tasty.

🥦 Broccoli, rice and vegetables

For this one I mostly used stuff that I found in our fridge, so again, feel free to switch it for anything else. Here are the ingredients that I’ve used-

  • Broccoli
  • Salt
  • Black pepper
  • Oil
  • Vegetables
  • Rice
  • Anything else

First, Take the broccoli and break it into smaller pieces. Wash it under running water, and let it dry out. Pre-heat the oven to 150-180C.

Once the broccoli is dry, take a baking tray and put aluminum foil on top of it. Place the broccoli on the tray, spread it out nicely. Then, take the oil, black pepper and salt and drizzle it randomly on the tray and broccoli. Then put it in the oven for about 10 minutes, until you’re satisfied with the results.

While the broccoli is in the oven, you can prepare the rest of your meal. We had some rice and beans in the fridge, so I just took them and put them in a bowl. Cut some vegetables, and place them in the bowl as well. Once the broccoli is ready take it out of the oven, wait for maybe 4 minutes and then place it in the bowl next to the vegetables and rice. And that’s it, your meal is set and ready to be eaten 🙂

And that’s it you guys! These two meals are super fun, tasty and easyyy to make! I hope that even if you didn’t end up making them, seeing the pictures and ingredients gave you some ideas of your own! And if you did end up recreating one of these meals, let me know. I hope that you have a lovely rest of the day, and that you’re taking care of yourself and your mental and physical health. Stick around if you’d like to read some of my previous posts, and follow for future “blogmas” blog posts 🙂

As always, take care, and I will see you tomorrow with blogmas day #3! I’m super excited for that one.

Toodles!
